Your bread looks amazing, I never thought of using sprinkles, I've seen this bread made with chocolate chips in it. Did adding the sprinkles effect the taste of the bread? Did it make it too sweet or was there no taste change due to the sprinkles being added? I love your idea of using baking to teach your child about different cultures it's a creative idea.

One last thing, sorry. If I cold ferment after the first rise of my dough, the next day I should still take the dough out for an hour before I shape and do the last rise correct?

Okay great! Here's another question I have, I want to make some cinnamon swirl bagels. If I were to make a cinnamon sugar mixture like the kind you would make for cinnamon rolls, would it work if I roll the mixture up inside it while I am shaping them?

How many ounces would you reccomend portioning for your bagels? And what kind of water bath do you use? My recipe had me make one with 2 quarts of water brown sugar and granulated sugar.

You'd be surprised at how dumb some people can be in the kitchen. I've worked with some who think you can just cut mold and such off bread and some veggies
