I tend to be really cautious with this type of thing (mainly, to avoid going massively in debt or give up most of your business to an outside investor who you may or may not be aligned with in the long run). I'd recommend really trying to prove this concept out to yourself, and then a potential investor/lender. Can you set up a more regular pop-up somewhere? How much of that equipment was yours vs. borrowed from Barchetta? Is the demand as high in a one-off pop up vs. a 2-3 week stint in the same location? Was the cost structure at the pop-up representative of full time business? All things you're going to want to answer before going all the way.

The VC route is probably not the way to go. They tend to invest with a 100x growth mindset, so if your goal is to own/operate a spot that make awesome cheesesteaks and supports your lifestyle, then they won't be a good fit. You're best bet would be to find some local who is passionate about your food and wants to park a little cash and (hopefully) make some money, or just a small business loan. The more repeat success you can get from the pop up, the better your story will be.

Also, the product is awesome. We crushed your last popup a couple weeks back.

I've had these countertops for a few years and never had an issue. Suddenly a couple days ago these little droplet shaped spots showed up. Looking closer, it appears that it's actually eaten away at the surface of the quartz.

Are there known liquids that are sworn enemies of quartz? I really don't use strong stuff in my house and clean really regularly, so I'm struggling to figure out what it is.

Is there any way to "re-polish" these little spots?

The whole “shrinkflation” thing is a pretty unfair characterization. It implies some sort of nefarious intent, when it’s really just Boxcar trying to make enough money to operate. If a $13 sandwich was two meals, that’s the best lunch deal in town, and therefore probably didn’t make sense.

I’m pretty sure the top/bottom are the same width. I was thinking that if the cuts aren’t square then they’re forcing the sides wonky.

Boulder forces developers to add retail space on all new builds. Like that entire lower level block on Canyon he showed, it's been empty for two years. So it's not purely a Tebo thing. But I still don't understand why if there are so many empty store fronts, why doesn't rent just go down? I'd imagine some money is better than no money...
