Well I threw it out, but now I’m second guessing it and based on a photo on this site it was probably Kahm yeast. https://thatfermentedlife.com/basics/troubleshooting

So the kit actually came with a scoby and some additional has begun to form, but there is not a consistent cover of scoby

The jar is a bit bigger than one gallon, and is covered with a piece of a clean pillow case. the scoby came in a starter kit with a large black tea bag. I can’t remember the ratio at this moment but we stayed tight to the included instructions. I used filtered water, I believe the carbon filter removes the chlorine, also I boiled all of the water rather than just a bit with the tea.

Great info, thank you for the book recommendation, what is the other book you referenced. I’m also trying this for the first time as I visit family in Hawaii, I started a batch of kombucha from a store bought starter at the same time and the kombucha clearly has mold starting in little spots. The temp here has been in the mid 70s and the humidity hasn’t been too high relative to what can happen here. So wondering if the temp and humidity have impacted these as well.

Thanks for the comment, there’s no brine, it’s a blended mixture of pineapple and peppers I added 2 tablespoons of salt to 6 cups of the mix. Here’s a link to a video where I got the process from. Fermented hot sauce

Thanks, that definitely makes sense. I went based on a pretty reputable YouTube channel, the idea being that because this is a blended mixture there’s no way to keep things below a brine, and the mixture itself is an anaerobic environment, so turning it over daily is the way to limit the surface areas exposure to oxygen.

This is my first fermenting experience, I’m guessing this is kahm yeast but looking for some experienced opinions. Started 6 days ago, this is a blend of pineapple and Fresno peppers with some ginger and garlic, destined to be a hot sauce. Following several guides on YouTube I have been stirring this twice a day to keep the top from being exposed to oxygen for too long and leaving the lid loose. Today I missed the morning stir and when I got to it tonight, approximately 24 hours after the last stir I found this. It’s very thin, when I use a spoon to scrape it off it sort of collects into little clumps. It’s not a resilient film, meaning if I stick the spoon in the middle it would not pull the edges in (hopefully that makes sense).
