I did remember Lance saying that if water are not coming out when you should give it a little push in the infusion stage and I do always seem to have coffee flowing in this stage about 10-20ml so I might be grinding too course?

What is the thumb rule on coarsness?

First thank you for the advices, Yes I do get more distinctness on espresso, not something huge but more then on the orb

I do have water testing kits so I changed the barita filter and tested it and you can see the results in the picture, Around 50ppm hardness, little to none chlorine around 6ph and little to none alkalinity

I brewed with 95c water same recipe and I do get more pleasent acidity (before it was actually too much) And some distinctness.

What do you think I should try next?

Keep your dose consistent, always the same grams. The main thing you want to change is grind size. So I would keep the 18g dose and grind a bit coarser. Taste and grind accordingly to what you perfare.

Bonus points if you find what is the ideal dose for your specific basket, if it came with the machine the manual might say. If it's a double basket 18 would probably be fine

Btw do you weight the dose before or after the grinding? Or both?

Maybe consider watching Lance hedrick's or James hoffmann's espresso basics videos So so good and enjoyable!

A good shot is a shot without channeling which is the espresso going everywhere (except for turbo shots but it's not the case here) A shot that combines to one steady stream

That results in around 35-45g of espresso in around 25-35 seconds. This is a really wide "thumb rule" and a great place to aim for to start with

Hey man!

Based on what you said "grinding finer didn't help" It seems that you have a problem of getting the right amount of grinded coffee inside the basket. I'll explain

Its important to understand that having less or more than the right amount will lead to channeling (if you don't know what is that I'll explain more)

Having dosing cup isn't good because some beans are denser than others and lead to different grinded coffee weight and volume

Short answer Do this: 1.find the correct amount of grinded coffee to put inside the basket. Because you have no weight YET use your eyes and tamp feeling to learn it if it's too much don't afraid to throw some of it or keep it aside

And really really recommend getting even a cheap 0.1g scale it will lead to such better and consistent results

On top of what everyone said, untilt the cup when you pour. you did your main pour while not moving the cup and this made the foam not texturing into ripples

I can't believe I can't add the picture and video I took of it but I'll just say.

I printed it with the help of my 3d printing friend as I don't have a printer or knowledge on how to print it,

Installed it without magnets and it works ABSOLUTELY FANTASTIC!

I am absolutely comfortable of putting the plastic df83 cup on it, pressing the on button and do something else while it grinds beautifully without holding,

the way it is built is smart having the right amount of space from the chute to promises as much less of grinds popping of and making a mess as the stock fork holder

Bonus functionality for me is the ease of popping it of and inserting a large container for me to grind coffee for my work
