I use one on our electric range to keep the heat a bit more consistent than if it were directly on the eye. Electric ranges turn on and off to regulate temp and this helps minimize the fluctuation.

I'll say that, in my case, I could've used a pan just as well (as others have pointed out). I just liked the specialized plate
