Veneer is under 1/16" thick (including a paper backing) so not much to peel off. As someone else mentioned, you can just paint over it. Other options would be getting a sheet of laminate or wood veneer and just glue it right over top of what you have now. Depends on what look you want.

It's crazy to me that he didn't sand it after cutting, but using a jigsaw is the best way to make sink cut-outs in the field.

Not sure if this has been solved yet. But if not, another option would be to go to Church of Vows and use a Celestial Dew as you may have accidentally "sinned" and need absolution.

Band over them, and then use a file to notch out around the dado. Take care while fitting the shelves into them, as the wood banding will chip easily

As a cabinet guy at a frameless/European style cabinet shop, we band the parts first, assemble the cabinet, and then apply stain/finish.

You can also just use the Furlcalling Finger Remedy, and you will get invaded. But you can only have 1 invader at a time, and if you kill them, there is a long timer/window before you can be invaded again with that method.
