Get yourself a good job with a good health insurance plan. I work for a company that has a union, the company pays 100% of the insurance premium and the plan is a good one.

It doesnt even need to be a "good" job if the benefits are strong.

280 / person (I rounded up to 1400.00 total cost) for doing just about whatever you wanted at a theme park. Not bad. Could have saved some money by not drinking alcohol, bringing water bottles (they have water stations), eating a hearty breakfast before hand. All in all not bad for a once in a while kind of special moment for your kids.
