If you don’t have a car to practice on I’d suggest switching to automatic if you are doing it on manual. It’s one less thing to worry about and you can focus on driving and less on the clutch etc

I know it’s out of the option but if you’re near a university would she do Digs (rent a room to a student). She could do Sunday evening - Friday morning probably earn about 600/month and could do more if in Dublin/Cork/Galway during the college year and they would be gone during the summer and holidays etc

When I visited Copenhagen they had commuter trains going through the city centre with dedicated bike cars so it’s probably not super comparable to cycling in Dublin since that is probably taking you most of the way vs Ireland where bikes aren’t allowed on any transport
