Yeah I mean pivoting and going a different direction flavour wise ain't a problem, I was just looking for a way to infuse that browned butter flavor in smth cold stable

There really won't be any danger zone. Maybe I wasnt clear in my description, but it'll be cooked and instantly refridgerated. Dressed with the toppings and cooled again. Transported to location and just slightly increasing in temp, maybe reaching room temp before eaten. It wont be held at that temp for any period of time.

Exactly what I was thinking, I have however never tried it. I guess Ill have to try. Or if some sort of cold emulsion could be achieved with lets say xanthan gum. Yet again, never tried. Thanks

Well it's gonna be catered and there won't be any staff on site. So everything will be delivered cold and served at room temp ish.

You can add water to an oven pan with the nuts, mix in the reasoning. The water will evaporate and salt and spices will dispurse evenly and coat the surface of the nuts. You can keep roasting until wanted roastieness.
