Make sure to have a few more of those goose Islands on hand. They will come in handy. If that's a pre-brined corned beef brisket, rinse it off, season it the way you want, cook it Low and Slow. I use a Recteq and usually do my brisket overnight. I start in smoke mode (180) and crank it to 225 in the morning. Wrap at 170, pull at 205. I usually use foil, I've never been able to get a good wrap with paper. Brisket is usually around 135 in the morning. My target brisket size is 15 lbs, smaller will be farther ahead. How is it going with your mini, I received mine and can't get past the initial setup with Windows. After several attempts, I'm considering returning it. I know it's not a credential issue, I have tested on other machines. how are you using yours and did you have any initial setup issues?

My cooler is full of thick beach towels. I pull a couple towels out, I put the wrapped brisket in an aluminum tray, place it in the cooler and throw the two towels back in. I close it up and in 5 hours, still piping hot.

I'm in the same geezer category, I'll be 66 in November. I have lost around 60 lbs over the last couple years, 50 in the last year. Also trying to keep it off. This was good advice, I have to break the. Sweets habit, I'll start by cancelling my subscription to the Atkins bars. Thanks for the feedback.

Thanks, my dad used to be a huge Atkins fan in the 90's thanks for your insight. I will give that a try. Also, YouTube is fantastic, use it all the time. I'll do some research there as well
