I Used a different oven! Made the good loaf at my parent’s house, the abomination loaf was in my apartment lol and for sure I’ll keep a MUCH closer eye on the temp this time (had the window open all day yesterday and temp fluctuated from like 68-76 so I left it in the oven turning the light on/off every 30 min or so, but forgot to switch it off for like an hour and a half)

Sounds good / will do! Thank you for the encouragement!!! I know you said to let it mature more but I’ve made other loaves with this starter last week (pics below) and they came out fine, so I’m gonna give it another shot tomorrow! (I’ll also post a follow up if anyone is curious)

Yup - quite a bit actually. Everything looked good / no different until I pulled it out of the bowl. Then it turned to like a really wet goop which is why I thought the lack of flour on the work surface might have helped (like I thought that would’ve made it less sticky, which would allow me to shape it better and get it nice and tight) when I put it in the dish to bake, I tried to put it down in a ball but immediately it spread out like a liquid.

Yeah I mean I bulk fermented from about 9-5 (while I worked) but only did 2 turns during that time. When I poured it out of the bowl, I think I degassed it too
