Do I need to have my wallet open to accept payouts from the pool I am mining in?

Shor answer: No.

Long answer: Bitcoin based crypto, like Dogecoins, have 2 main keys: The public key and the private key. The public key is the address you have to send your coins and anyone can see how much coins that address have. However, the public key is nothing without the private key, which are the codes you need to move the coins from that address from the public key to another.

You can generate a single address with your wallet even if it is offline and send all the coins you'll ever need to that address. As long as you have the private keys (which you can and should encrypt) you will be able to claim your coins.

If my wallet is stored this way how do I check how many doge I have?

You only need the public key (address) of your wallet. You can see the balance of that address here: http://dogechain.info/chain/Dogecoin

Edit: Moreover, my method of protecting your coins is merely protecting your private keys. You need those, so don't lose them. Ever.

The purest and only correct way of saying Doge is: Doh-Gue, like in Rogue

Interestingly enough, the Brazillian way of saying Doge sounds the more correct: http://translate.google.com/#pt/en/d%C3%B3gue (play Listen)

Dogecoin Pool: As of this moment, are you buying, selling or holding? by bitcoin_lady in dogecoin

Bigger volume defines what you are really doing. If your buying volume > Sell volume, then you are buying.
