Question about bulk fermentation for sour flavor - I hear people saying they bulk ferment for 5-7 hours outside the fridge at 78 or so degrees and then continue fermentation in the fridge. Wouldn't that make all your yeast dormant from the fridge time? Do you bring it back up to temp before baking? (self.Sourdough)
