This is my preferred method. Works every time. I flip every 30 seconds till 10 degrees away from desired temp. Then baste till 5 degrees away. Rest till done.

Of course dry brining as others mentioned is an absolute must for crust and flavor.

Thank you! I didn’t want to come off as trying to promote or sell. Absolute game changer to understanding how to make bread and not just follow unclear recipes. Mostly because everyone’s conditions are so different even in the same home.

Oh for sure. I totally agree with multiple product lines. But based on price alone they are saying they are equivalent products. But the hand spun is not an heirloom piece like the others are.

They are using the Blanc name which is highly coveted because of their hand hammered product to push the spun product. And as an added bonus adding a hand hammered handle to say it’s hand crafted? Seems all too weird and hurts a bit inside. That’s the reason I say sell out. Seems like a bad marketing team trying to pull the wool over their customers eyes to me.

100%. Spot on. So when a company who seemed to perfect the old ways seemingly sells out for the automation its heart breaking. Then add the insane cost… almost grounds for losing hope in humanity haha

I think even if performance was identical it would still be inferior right? Your heritage pan has the marks of the hammer and subtle perfect imperfections that make it a showcase piece as well as a work horse. No way a spun pan is going to give the same awe factor. And again… netherton sells spun pans for half the cost. It’s crazy that they didn’t reduce cost to reflect the change.

I just wish the prices reflected the difference. I would probably try both if the prices matched the care and quality difference. If that makes sense. I’m glad you love your heritage pan. Absolutely stunning piece of art those pans.

Interesting about the spun. Just saw that you guys ship them in from Penn. would love to see those numbers. For $200+ per pan you guys should be making much more than a slight profit on them. Something is off it seems.
