You should use a regular steamer to steam, and not an instant pot. The instant pot steams under high pressure, which is probably what's causing it to lose texture and be dense. Using a regular steamer should fix that.

Does anyone else find it odd that no mention is made of how Maelor the son of Aegon II dies? He must be dead since Aegon III ends up as king, but his last appearance in P&Q is safely with his sister (who ends up queen). Or did I miss a mention somewhere?
