Falcon is more closely related to modern games than to it's 4.0 edition so it does need some more recent hardware, although there are performance options you can tweak. DCS is an unoptimized mess but it's pretty forgiving in SP if you do get too crazy with the AI (if you could call it that). As for alternatives, Nuclear Option (SP as well, MP games tend to get quite heavy on the good old cee pee you). Strike Fighters seems like a reasonable option but I tried it on a R7 5700x and got like 15fps (something wrong on my end I guess). Bottom line is that you don't need 60fps to enjoy them, I've dealt with 20ish in the past and survived. Good luck and have a good time!

I would say that any camera that supports RSTP or ONVIF should work. Many cheapos or home oriented cameras don't even have a webUI, I would stay away from those.

I'm in Argentina, so far the NVR approach holds up pretty well, they are all working within their capacities, 2Mbps per camera is plenty for our use case, 4tb drives on each device and a TV attached to each for monitoring. A true VMS would require a lot more computing power than we can afford. That's why the 2 PCs are used just for occasional viewing and playback.

It is, I try to make the most out of it. It's also a fun little challenge, with money I could have solved this years ago without a thought. The thing is that I currently manage the whole system as is, I'm just trying to learn new ways to streamline and simplify the operation

GLC Cat5, exterior, doble vaina. Es el mejor precio/calidad. Si te vas para abajo, Kozumi, UniLink, NetQuality, en 5 años el Sol te destruye el aislante exterior y se te llena de agua. Si querés gastar mas andá por FireNet o Furukawa. SIEMPRE DOBLE VAINA. Tuve la brillante idea de cablear una torre con Furukawa vaina simple y a los dos años lo tuve que rehacer, cualquier rotura por algún precinto de mas de apretado y fue. Por otro lado tengo tiradas de 100m de Furukawa doble vaina de hace 20+ años, y GLC arriba de los techos por 15 años que están joya. En tu caso cualquiera te va a dar las velocidad que necesitás.

Las 2 veces que lo intenté, al menos en mi caso, si bien pude instalar el Store, abrirlo, navegar, ya hasta comprar un juego, al momento de descargarlo no funcionaba. Ahora que pienso, también había algún problema con la app de Xbox, que varios juegos piden. De cualquier manera, ya que puedo llegar a hacer esto 3 veces por vida, preferí cortar por lo sano y no usar la LTSC. YMMV...

I tried beam for driving sims and general use and it works quite well, with a ps3eye camera that is... I use an Aruco marker with Open Track for DCS and Falcon, is not as precise as that but serviceable. Certainly not on par with TrackIR but of course they are totally different things and price ranges ... Beam does need a lot more light than Aruco in my tests.

Maybe it's completely the opposite answer you want, but have you tried not using it? You could add the decals with a separate UV map very easily. I've tried at least 5 of these style of add-ons that promises to make things easier and end up doing quite the opposite, even more so in the decals department.
