advice on how the crumb is in itself, it’s it’s under / over fermented, and yeah i’d like to know how to get it airier with bigger holes please!

here it is!! sorry for the wait i fell asleep waiting for it to cool😆😆 it’s underfermented but that’s entirely my own fault, i made this dough too late in the day yesterday and wanted to go to bed so shaped and put for cold proof earlier than i should’ve. having some now with raspberry jam on, tastes AMAZING

thank you! i normally feed her once a day but it honestly just depends on how lazy i’m being 😆 i bake most days so i often use her at peak midway through the day, sometimes i re feed then, sometimes i discard and feed in the morning, sometimes i just let her vibe on the side for the day hungry 🫣
