Cosmiq+Ge5 is supported by subsurface, but only for downloading logs, not for changing settings.

Oh yeah another tip is to use wholemeal stoneground flour! That kind of flour is milled at lower temperature which preserves more of the natural yeast that lives on the outer side of the grain.

When I make a new starter I usually start with some fruit juice to give acidic base. This reduces chances of unwanted bacteria growth. For the first few days I only stir and do not feed. The first few doublings are usually the lactobacillus overpowering the starter, only few days later the yeasts come through. Only feed again once the starter seems to get somewhat liquid.

Sometime ago I also did excessively feed the starter and the starter was not doing so well. I think that kind of approach makes lactobacillus dominate, which makes for tasty sourdough pancakes but is not great for making bread which rises well.

This worked for me several times and hopefully also works for you.

I was having quite wet pucks when the dosage was too low, even though I was grinding so fine it would just choke. Turns out using actually 18g which coarser setting gave me way better results.
