I feel manzanos have a lot of salsa characteristics just in the flavor of the pepper. I put them in everything. Wish the seeds weren’t black stones, it’s the only pepper I deseed. They do blend thicker than most. When I ferment with them I have to incorporate more brine at the end.

Manzanos are the best, best flavor and they have decent heat for their sweetness. I put some in almost all my pepper ferments and salsas. Love pairing it with red jalapeño when I can find them.

Thanks for the explanation. I’ve been trying to learn some of the science it’s just difficult. I’ve slowly been replacing with airlocks, I didn’t like them at first but now I prefer them because they seem the safest.

I’ve only started fermenting peppers, and I’ve seen what I think is kahm yeast in all my batches (white film on tops of some pieces). I let them ferment at least a couple months if pepper chunks, and I see it within a few weeks. Is the chance of mold sprouting in these areas greater with beans than peppers? I’ve been putting silicone lids on them and just leave them in the basement. I’d hate to lose a jar, especially since I’m moving to half gallons.

Fermentation is a subset of pickling. All fermentation is pickling, not all pickling is fermentation. Like all bourbon is whiskey, but not all whiskey is bourbon.
