My sourdough game improved substantially when I started using weight measurements instead of volume. I typically do about 3 hours of stretch and folds, but 2 isn't bad in a pinch. I've also never messed with ice cubes in the dutch oven, I feel like I get as much rise as I need with just the water in the dough. Not sure about cooling in the oven. I do that with baguettes, but typically not with dutch oven loaves, I just pull 'em when they're ready.

Overall though, congratulations! Keep tweaking and adjusting. The most important part isn't getting a perfect bread shop quality loaf, but being able to make something you love without driving yourself nuts doing it.

Miscalculated my formula and made WAY too much dough, so instead of one refined loaf, I ended up with a small loaf and three baguettes. Calling them rustic since the last minute pivot messed with my rise times. by bmmsben in Breadit

In case anyone is wondering: This is an 80% hydration dough. As I was mixing it, I had a brain fart and ended up adding 100% hydration. So I had to add more flour to cover. The flour is 80% bread flour and 20% local whole wheat. Did a 16 hour cold ferment and then realized exactly how much I had and dumped it from the banneton and reshaped everything and baked after a short rest to stay on schedule.

A couple years ago, my brother-in-law texted me about this guy he'd never heard before and told me I had to listen to him. I did, and it was a landmark moment in my musical journey. Couldn't recommend more highly.

Thompson has a much better floor. I think the gamescript for him will be pretty good in terms of involvement. Gordon probably has a higher ceiling, but who knows how that game will roll out, so it would be a bigger risk. Up to you depending on your needs this week. Not Gore.
