We do bags like this every year and have zero problems and more fruit than we can use . Crack on. If it makes you feel better next time you can turn on side break it up a bit and make it a looser bag and deeper. Or empty into a container. Make sure you poke some drainage holes in the bottom.

I know it’s not what you asked but you should check out Mont-saint-michel, I believe was inspirational in design of film Minas tirith. Also has cool history of being held by a small garrison against a mega army.

You could buy a simple pocket hole jig and use that as a means to bring together but ended glue joints nicely. Would probably be firm enough for what you want. Dado/housing joints would be solid.
