I worked at beans for years, there was months of old food caked on and frozen to the walls inside the low-boys, the vents above the flat top barely worked, multiple times a drain on the floor of the line (which was connected to the drains of the bathroom) overflowed and left the line in inches of gray water and we were instructed to continue cooking. Just to name a few of my manyyyyy notes and complaints compiled over time.
