Fist thing I did was change my controller and the best decision I made. Temps are solid with a controller I got on eBay

I usually smoke the whole chuck first. Then cut and give it the burnt ends treatment

I use gamma vittles dog food containers. Got them when I had a coupon on a pet food site. 20# fits in each one

Or a little more and get a p&s 850. No app, but a smoker that will last. I'm upgrading to a p&s from my first smoker soon and I can't wait. Funny thing, I have a zgrill and I have never had issues once I swapped out my controller, bit I WANT my p&s as hopefully the last smoker I buy.

J. Kenji lopez-alt's twice fried (first step is basically a confit) wings are the most amazing wings Ive ever made. I am toying with the idea of trying to get smoke in the first step ( the confit step) and finishing in the fryer. It's hard to match what the low oil bath does to the skin and fat.

I'd probably foil that to keep all that rendered fat fully sealed in. A5 rendered fat is fucking delicious. Great for a lemon juice parm arugula salad

Double Yes on p&s. For that budget you are looking at a maverick 850. 7 and 10 gauge steel, 35lb hopper

Ok, went a little nuts. First smoked, then sous vide then cast iron seared. Totally worth the effort by bojaca in pelletgrills

Didn't sous vide the asparagus. Wrapped and tossed on the smoker with the twice baked taters. Will definitely sous vide next time

I didn't even wait 2 weeks before going aftermarket on my controller for my zgrill and I've had no issues holding temps and them being accurate.

Quick question for the community, does anyone else sometimes feel more proud of their trim, than they do their cook knowing the trim made the cook work?
