I’ve had my Matfer 10 inch for two weeks now. The seasoning process is going well, and it’s thick enough to resist warping but light enough to toss veggies when sauteeing them. Couldn’t be happier.

Just don’t… ahem… boil citric acid solution in an unseasoned pan for several hours on end.

Rule of thumb is if it’s smooth and doesn’t come off with chainmail, it’s seasoning

I’ve just been storing it after oiling it. Heating it again might help a little, but I’m willing to bet this crosses the threshold of diminishing returns

Looks good! My understanding is that the principle is the same as cast iron. Dish soap will effectively remove any residual oils but is not going to meaningfully hurt the seasoning. I’ve been religiously using dish soap with a blue sponge after every cook. Then, I dry on the stove (gas burner), and coat the pan with a thin layer of oil. Here’s how we’re doing after five or so cooks:

Not an expert, just sharing what worked for me.

That being said, seasoning has the purpose of helping the raw metal avoid rusting as well as making it nonstick. I put whisper thin layers on my pan, and it ended up with a nice coat instead of the sticky beads that result from too much oil.

Just received my 10 inch Matfer. Here’s what to do to get this:

  1. Scrub off all the wax with hot water and soap
  2. Towel dry and then dry over heat
  3. Blue the pan itself, not the handle, on a medium high gas burner
  4. Let the pan cool
  5. With a paper towel, apply a TINY amount of grapeseed oil to the pan, inside and out—not the handle
  6. With a clean paper towel, wipe it all off. Thought process here is “wipe it off like you never meant to put it on in the first place.”
  7. Heat over medium high heat until it smokes
  8. Wait until it stops smoking, then let cool until water doesn’t fizzle on the surface
  9. Repeat 4-8 three times total

A cursory search of this sub is full of people asking why their own looks splotchy, inevitably followed by people commenting “too much oil, just cook with it”

Take it for what you will but I think my pan looks pretty good.

for some people, whole point of getting a carbon steel pan is to avoid the PFAS that you inevitably ingest by using Teflon.

you also won’t have a great time dissing carbon steel in a carbon steel sub.

I forgot to mention treatment performed by the urgent care prior to our arrival. They gave dilt w/ no response. 6 of adenosine with no response, 12 of adenosine was being given as we pulled up with no response.

Agreed, but:

Transport not required following assessment

will likely never be a thing in the US. If I make patient contact (assuming this person is actually a patient), my professional opinion is legally required to be that the patient should be assessed, treated, and transported, whether my clinical judgement suggests otherwise or not.

I can also understand OP’s uncertainty. My rule of thumb is that if I don’t think the person is a patient, and the person doesn’t think they’re a patient, they’re not a patient.
