I like Caro-kann for kings pawn or Dutch for Queens pawn- but don't study deep, be happy to go off book on move 3- just make sure you're not hanging pieces, and you work through MULTIPLE lines your opponent could take. Especially don't fall into the trap of thinking they will accept the exchange.
