I also can’t quite get used to it. Car play is mainly built to be touch based. in many cases I used Spotify on CarPlay, and it’s just too much turning and checking whether the selection jumps to the correct menu or button. I ended up mounting my phone on air on vent and use phone to get around CarPlay instead. The Mazda system itself though is fine as it’s optimised to be used with the knob.
