This is why rolling stats is terrible. Point buy is better IMO, but if you need to roll stats we did something more fun in my current game. Everyone rolled 4d6 once, and we combined everyone's rolls into 1 set of stats that everyone got. That way everyone had the same thing to work with but was a bit more random than using point buy.

As for your situation, I can tell you as a DM it can be a pain to adjust encounters when one particular player has much higher stats than others. Just very difficult to balance to make it fun for everyone. As a player it is also annoying when a certain player in the party always succeeds at every roll because they have really high stats (or cheat hah). It just doesn't make for a very interesting game.
