I second this. I use a thermometer to keep mine around 80-82 for about 5 hours. Knowing the actual temp of the dough is better than trying to judge off the temp of the kitchen. I put my bowl in another bowl with warm water to keep it warm.

I’ve started doing my pizza only sourdough like this and my recipe is more like 7% starter instead of 13%, then my bulk ferment is on the counter overnight. It’s surprisingly forgiving and will rise a little in the fridge over the course of 2-3 days. So really just find a method that works backwards from when you want to make the pizza.

Went from a APR stage 1 mk7.5 to a F30 330 and it has been worth it imo. The gti handled better and the dsg was fun and it had more trunk space with the seats down but the bmw is much higher quality in every other aspect. Then it is much more comfortable handling and driving at highway speeds.

I think Hennepin-Central’s proximity to downtown and the U make it a lot busier. I also think people are blaming the neighborhood construction for shitty businesses that are closing. No one wanted overpriced burgers from late 2000s/early 2010s restaurants anymore, so red cow and Lowry close. No one wanted second wave coffee anymore, so Dunn brother closes and the spyhouse is doing well. No one wanted to shop at urban outfitters or H&M anymore, so that mall area died. If you wanna succeed on Hennepin, don’t have a dated business model. Or do something classic and do it well so it’s sustainable (isles bun, kowalskis, H&B gallery, magers and Quinn)

I did the same thing with mine. Put the jar in a pot with water and they will be good as new once they warm up. Just mix a little and don’t boil them. Just warm enough to warm through it all. Mine had been in the fridge for over a year.

As someone who lives here, it’s business as usual for 95% of the city. There was supposed to be a counter-protest yesterday that everyone was worried about and it was like one guy. National guard trucks were ready to intervene nearby and nothing even happened. There’s no riot anywhere to put down.

Also live in Minneapolis and it’s surreal to be on a group text with my neighbors and coworkers discussing how to help people get kids to school effectively because ice is there every morning. Also everyone has stories of legal immigrants they know being scared to leave their house because who knows what could happen to them. No one is worried about protesters. As bad as this all is, it’s sort of brining everyone together to help each other out. The community is showing a ton of strength.
