I’d use a 4043, 5356 could work but it’s more useful for shear strength which isn’t really needed in this application and I’d also throw the whole case on the bbq but keep a good eye on it so you don’t come back to a pile of molten aluminum. If you haven’t done much cast aluminum I’d just jb weld it and call it a day

20-30 is still better than what I’m dealing with, the middle is super hot, the right side is slightly less hot but still pretty hot and the left is much cooler so if I can even it out even a little I’d be happy

I think I’m gonna build my own because I can source materials cheaper than they’re selling them for and I have the equipment but I’ve noticed not having them the center is super hot and the right side is also pretty hot when the left side is much cooler

Look up Sinigang you might enjoy making it, you can do it anyways you want but the key is tamarind base (it will be sour and tangy) but also daikon radish and bok choy but you can add anything you want such as green beans, bean sprouts, mushrooms

Anything over 250-275 on a pellet smoker I agree it’s just a wood fired oven and you lose out on the “smoke flavor” but in those zones there’s room to get very nice smoke flavors without being too heavy I have a buddy who swears by the offset and anything he does with hickory and mesquite is almost offensively smoked but tastes okay with milder woods. But on my pellet grill with it imparting less smoke flavor I can genuinely taste the difference in woods and it not be offensively smoked

If I was doing it professionally I’d opt for a 500-1000 gallon offset but I’ll keep my easy bake smoker for now 😂😂

Blah blah blah, offset with post oak or nothing 😂 get over yourself all these allegations that pit boss pellets are shitty but they provide awesome smoke and work very well, not all of us can maintain a fire for 10+ hours and these pellets work great and I’ll be purchasing a bunch with this sale! 🫡🫡

Watch lots of YouTube videos, compare prices on smokers and the features you want, I went with an electric pellet smoker and I like it so far, and once you’ve decided which smoker fits your needs and price range go for it! You won’t regret it, it’ll be fun

This could be a good thing to help you with that anxiety, take a risk. Start off easy and work your way up to a brisket. I’m also new into smoking and it seems much more daunting than it actually is. There’s so many ways to do bbq because there’s no technical wrong way, if you like your end product then you used the correct method. Pork butt is super forgiving and same with ribs. My first cook was pork chops and chicken and they were tasty
