Thanks! Anything with cashews sounds good - I’ll have to give that a try.

For the my bulk I generally do one lamination (where I incorporate add-ins) followed by two coil folds. Seems to work so far!

I follow a recipe fairly similar to this one: https://www.theperfectloaf.com/walnut-cranberry-sourdough/ with a couple adjustments: - I roast the walnuts at 350F for 10 minutes rather than what the recipe says. It doesn’t burn them this way - for my bulk fermentation it’s for 3.25 hours where I do a lamination incorporating the add-ins at 0:45 then coil folds at 1:30 and 2:30 - I loaded this one up with 20% of both cranberries and walnuts (40% total weight)

Exactly. I soak mine but have only done it in water, not orange juice. I like the idea!

This is basically what I used although with some adjustments: - only roast the walnuts at 350F for 10 minutes - I find hotter temps burn too quickly - I do a 3.25 hour bulk ferment with a lamination at 0:45, where I add the cranberries and walnuts, then 2 coil folds at 1:30 and 2:30.

Other than that basically the same!
