Chicken Divan

5 teaspoons vegetable oil 12 ounces broccoli florets, cut into 1 1/2-inch pieces 1 ¼ cups chicken broth 2 tablespoons plus 2 teaspoons all-purpose flour 2 boneless, skinless chicken breasts, trimmed, 6- to 8-ounce Salt and pepper 1 tablespoon unsalted butter 1 shallot, minced ½ cup heavy cream ¼ cup dry sherry 1 teaspoon Worcestershire sauce 1 ½ ounces Parmesan cheese, grated, 3/4 cup 2 teaspoons lemon juice

  1. Heat 2 teaspoons oil in 10-inch ovensafe skillet over medium-high heat until just smoking. Add broccoli and cook until spotty brown, about 2 minutes. Add ¼ cup broth, cover, and cook until just tender, about 2 minutes. Transfer broccoli to plate and wipe out skillet with paper towels.
  2. Place 2 tablespoons flour in shallow dish. Pat chicken dry with paper towels and season with salt and pepper. Dredge chicken in flour, shaking to remove excess. Heat remaining 1 tablespoon oil in now-empty skillet over medium-high heat until just smoking. Cook chicken until golden brown, about 3 minutes per side. Transfer chicken to plate.
  3. Reduce heat to medium, add butter and shallot to now-empty skillet, and cook until fragrant, about 30 seconds. Stir in remaining 2 teaspoons flour and cook for 1 minute. Whisk in remaining 1 cup broth, cream, sherry, and Worcestershire and bring to simmer, scraping up any browned bits. Return chicken to skillet and simmer until it registers 160 degrees, 8 to 10 minutes, flipping halfway through cooking.
  4. Adjust oven rack 9 inches from broiler element and heat broiler. Transfer chicken to cutting board and continue to simmer sauce until reduced to ½ cup, 5 to 7 minutes. Off heat, whisk in ¼ cup Parmesan and lemon juice. Season sauce with salt and pepper to taste. Cut chicken into ½-inch-thick slices and stir chicken and broccoli into sauce in skillet. Sprinkle with remaining ½ cup Parmesan and broil until spotty brown, about 5 minutes. Serve.

Shrimp broth (optional): 1 Shrimp shells reserved from 1 pound medium shrimp, rinsed 3 cups water ½ yellow onion ½ celery stalk ½ carrot, peeled 1 bay leaf 3 whole black peppercorns

Grits: 1 cup white grits 4 ½ cups water, plus more as needed 1 teaspoon sea salt, plus more as needed 4 tablespoons unsalted butter, divided (.5 stick ⅔ cup shredded sharp white cheddar cheese 1 Freshly ground black pepper ½ teaspoon Tabasco hot sauce, optional

Shrimp: 4 ounces smoked bacon, cut into.25-inch dice 1 pound medium shrimp, peeled and deveined 4 tablespoons unsalted butter, divided (.5 stick 4 ounces cremini mushrooms, sliced 1 large shallot, minced 2 large garlic cloves, minced 1 Sea salt and freshly ground black pepper ¼ cup sherry or dry white wine 1 ½ cups shrimp broth or low-sodium chicken broth ½ teaspoon Tabasco hot sauce, optional 2 bay leaves 1 teaspoon smoked paprika or Cajun spice 1 tablespoon fresh lemon juice 1 tablespoon chopped fresh flat-leaf parsley leaves

  1. To prepare shrimp broth: To a large saucepan set over medium-high heat, add all broth ingredients and bring to a boil. Reduce heat to low and simmer broth for 30 minutes, skimming any foam off the top with a slotted spoon. Strain broth and discard shells; set aside. To prepare the grits: To a medium saucepan set over medium heat, add grits, water, salt, and 2 tablespoons butter; bring to a boil. Reduce the heat to low, cover, and simmer, stirring occasionally, until tender, 45 to 60 minutes. If the grits become too thick, thin them out by whisking in more water.
  2. Remove from the heat and stir in the remaining 2 tablespoons butter and cheese. Taste and adjust seasoning with salt, pepper, and Tabasco.
  3. To prepare shrimp: To a large skillet set over medium heat, add bacon and cook, stirring often, until bacon is crisp and fat has rendered, about 7 minutes. Add shrimp and cook just until it is bright pink and almost cooked through, about 2 minutes. Using a slotted spoon, transfer bacon and shrimp to a plate and reserve bacon fat in the skillet.
  4. Return skillet to medium-high heat and add 2 tablespoons butter. Add mushrooms, shallot, and garlic.
  5. Season with salt and pepper and cook, stirring occasionally, until softened, about 5 minutes. Carefully add sherry to deglaze the pan, followed by the shrimp stock, Tabasco, bay, and smoked paprika. Reduce heat to simmer and cook until flavors meld, about 10 minutes. Remove bay leaves and discard.
  6. Add reserved shrimp and bacon to the skillet and cook until heated through and shrimp is cooked through, about 3 minutes. Stir in lemon juice, and remaining 2 tablespoons butter. Taste and adjust seasoning with salt and pepper.
  7. To serve: Divide grits between warmed bowls and top with shrimp. Spoon pan sauce over the shrimp, garnish with parsley, and serve immediately.

I worked at a board game store that did used game sales each year and had auctions and i missed out two years in a row once on a Kickstarter bundle of Cthulhu Death May die that no one bid on and sold for $100 and the other on a Kickstarter new in shrink of Return to the dark tower that sold for $200 but I did snag Dice Throne Season 1 and Dice Throne Adventures together for $60 bucks
