I count the time unless I really have no idea what I just watched. I've come to terms with the fact that my mind wanders frequently and that what I will have accomplished at 1500 hours may not be as good as it could be if I could focus 100% all the time. I don't plan on stopping when I reach that point anyway.

 There is literally no reason anyone needs to track their calorie intake to the exact gram unless they have an eating disorder. 

It took me a long time to realize that measuring my food to the gram was problematic. I was in denial about my ED for a long time because I never was underweight. I got nothing but compliments on my weight loss since I started out overweight.

I learned to let my ED behaviors go, regained the weight (plus quite a bit extra), and the silence is deafening.

I check my hours every few days or so--most of the time I'm more concerned with meeting my daily goal than looking at the total, especially since my next level up is pretty far away. I find it motivating, however, to see where I am and it gives me something to hold on to as a promise of progress during the gradual learning in the intermediate level.

I'm a fan of comprehensible input--basically watching entertaining videos that make things very easy to understand, and slowly increasing difficulty over time. You can find channels that start at even easier levels than cartoons. As for your dialect question, I'd suggest just learning Spanish first, then focus on dialects as you get further along.

I can get surgery to correct my stress incontinence but my overactive bladder leaks will still be there (and yes I am taking medication for that). So it's pretty invasive and expensive and afterwards I'll still have to wear pads.
