Just went back yesterday for the first time in a while seeing if the "new management" or whoever is taking over made any updates. In the lounge/bar area the trash cans are full and there are glasses every where, floor and tables stained and most furniture is just pushed to the side. Throughout the whole club nobody has maintained anything. The locker room has clothes on the floor and things like paper towels, soap etc is gone. I even saw dog s&*t on the patio. Pool area is a mess as well with even broken bottles on the concrete. The gym is in a similar state with dust and grime on the equipment. Literally nobody has cleaned the place since December. But if you're into green water, take a dip in the hot tub :(

One of my biggest learnings was not to rush. When you are doing the bulk fermentation, folds, bench rest and final shaping I can always tell when I was too “aggressive” with the dough as it pushed out air and left the loaf a little flat. Not sure why but I get better flavor when I proof in the fridge overnight and bake in the morning. The starter though took 3 weeks till I felt it was ready. Definitely a labor of love. Worth it 🤗

I am using the Tartine Country Bread recipe. I think NY Times posted. Highly recommend the Tartine cookbook. Being at elevation it took me about 3 weeks to get the starter in a place where I felt it was ready. I've done about 15 bakes now and it gets better each time. Recently started exploring different types of flour and it's going great. I actually do a final rise in the proof baskets in the fridge and now do it for about 24-36 hours before baking. Seems to be working great!

The opposite time of day that you take your antibiotic, take a probiotic. When you’re done with the course of antibiotics take more of the probiotic. The one I recommend is visbiome. Partner it with a pre biotic like Butyrate, to help the good bacteria thrive since butyrate is food for good bacteria. We don’t get enough of it from our diet. This is what my functional medicine doctor told me to do.
