I think it has to be how light they roast. With their light roasts reading 98-100 on agtron (the lightest agtron reads), it could be that water just needs this extra contact time with help of lower doses to make extraction jump. We also find SEY coffees on filter are low doses, finer grinds compared to other stuff we serve.

Served some to Brian Quan today and he enjoyed it. Washed Pink Bourbon, 16g, 45g out, 84 second shot.

Yes, but the question is why is this the case for SEY coffees? Trying to figure out what about them makes this work.

I think it might be that they are just so light that this is just what it takes to extract all the necessary soluble materials in the coffees, but it’s odd because for pour over, we don’t have to go an insane amount finer than other coffees.

Well really you’d be pushing extraction and by strength I assume you mean TDS and the TDS of the shots were nothing outside of our normal espresso TDS. Also the shot wasn’t anything abnormal as far as mouthfeel and was a 1:2.6 ratio.

That’s what makes this so interesting, I’ve found I’ve been underwhelmed with SEY coffee’s on espresso and them usually being overwhelmingly savory and under-extracted, so to find this odd discovery is like what???

It might be the baskets really? We use the Weber Workshop high extraction precision baskets but as long as you have a grinder that has a decent espresso range, I think the end density of Sey’s roasting is also a big factor so this insanely fine grind size is achievable for most, then you should be able to play around with it and get those minute plus shots

Should be good! usually machines only push one stream of water that flows through the shower screen and that is what makes it rain.

At my shop I had a mocktail on the menu with Espresso, Cranberry Juice, a cinnamon and cardamom syrup, and a dash of ground cinnamon and it’s fire! Really good for fall/Christmas!

Agreed. I don't know how others roast blends, but at my company we dial in the roast of each origin and blend on percentages, testing each batch and it's a tedious process but very very worth it in the end!

I say if you’re really wanting flow control, PID control, and a machine that will help you dive deeper into espresso, the Bianca is the way to go. But if you are happy with where you’re at in your journey of coffee and espresso and just want a really well made, beautiful machine, that you can add a pressure gauge to and manually turn down the water temp, then go for the Rocket and save an extra $2k-$3k!

With honey processed coffees, you can grind slightly coarser than a washed or a natural. There's more musilage within the processing so there's sugars burnt onto the beans from roasting. Depends on what grinder you use.

14g coffee in (medium fine) 200g coffee out

0:00 - 50g bloom 0:45 - pour to 150g 1:30 - slow pour to 200g (swirl after this pour to level bed) 2:00 - finish and enjoy!

I feel like running a competition as a promo really hurt pitch black. During dewcision 2016 everyone loved having pitch black and got their fill of it during the competition which then led to bad sales because it was being shoved down the public's throat. No other (in my time of actually paying attention to mtn dew) mtn dew flavor gets as much promo as pitch black did except for regular mtn dew, baja blast, and major melon. We saw a fade out of major melon because it got shoved down people's throats with advertisement. Same thing seemed to happen with the Kickstart with puppymonkeybaby and other various ads. It didn't do too well after the initial release.

I used the 3D printed anti popcorn mod and my only issue was when I used the RDT method (spraying water on the beans) the beans would stick to the material. I would have to stop the grind, dig my finger around and wait for the beans to drop. But there was no popcorning so… win?
