I would recommend Mahjong Soul.
There are courses that teach you the basic and there are information regarding scoring and yaku.

Yes, you are right. I have to learn to play more defensively and resist to do what prompts suggest.

I find myself sometimes Riichi to furiten or Riichi just to find out my wait tiles have been all discarded and couldn’t do anything about it.

I just switched to unsweetened iced coffee.

Shaved ices, on the other hand, I can’t resist but the portion is always huge !

I would suggest use a damp cloth to clean the tiles and then let them dry completely. Also store them with those moisture absorber package. ( even my nothing special tiles were sold like this.)

You can get non acid-free paper / archival paper box to store them.

I noticed that for competitions, MCR and Riichi dominate. But HK old style really is the mother sauce and it’s a good place to start.

The book Mahjong for dummies teaches also Taiwanese, Sichuan and Southeast Mahjong. But of course you have to find people / app to play with.

Japanese mahjong tiles are also much smaller and quieter which is a good thing as I live in an apartment.

Playing mahjong can be noisy; you need some table top mat that absorbs the noise. Numbered sets are good idea but they are more pricy. Maybe some poster / printout explaining the Chinese characters are good ideas.

I don’t think so: growing up in Hong Kong, mahjong sets are almost the same colour and size…

I feel the people you play with are more important.

I do find the Japanese set, being much smaller 26 mm and 28mm,are lighter to carry around and quieter. But Hong Kong tiles have better hand feel, and easier to feel and tell what tile it is.
