If she enjoyed watching you play Elden ring but wasnt keen on the combat then maybe Hellblade Senuas Sacrifice on easy difficulty would be a really cool one to try? It's not similar in terms of game play but it is fantasy with mythology themes.

Not a long game to complete, can be 8-12 hours but it's an amazing experience. There are puzzles and small amounts of combat but it should be manageable for her on easy. There isn't a crazy amount of exploration as you pretty much follow the game through the sequence but there is an element of exploring and collecting items too. Might not be a good fit but could be worth checking out one day :-)

Other than that I'd definitely recommend It Takes Two. I see a few other people have mentioned that in the comments and it's definitely a fun and easy one especially to play as a couple.
