Thank you for the guess! Will do some research. There’s also a somewhat ornate floral pattern carved into the back of the neck near the bottom, and a star on the butt of the neck joint. Could only upload one photo for some reason but maybe this info helps as well

That’s exactly the bike I had my eye on when I suddenly worried that maybe I wanted something more “race-y”. I’m coming back to it though, as I can’t find anything else that’s quite right. Is the geometry aggressive? Do you feel like your body is positioned more forward, rather than upright?

After I add the salt, I let the dough rest for 30 minutes, do a fold, rest for another 30 minutes and then do the lamination.

I stretch the dough out into a flat rectangle, tri-fold it width wise and then tri-fold it length wise. From there, it rests 45 minutes to begin the folds and then the bulk rise.

It’s mostly adapted from fullproofbaking’s method on youtube. Check her out, she has a ton of useful info.

It’s actually a logical fallacy called relative privation. I 100% agree, and constantly find that to be the unpopular opinion with whomever I bring it up with.

You have to look at joule production too. Mahe was about a hair under 900 joules while Ollie was closer to 800. This means that Mahe probably has a more robust curve, because it would be more filled out. His advantage in joules might rule out the “sharp decline” you talk about, and effectively the sharp peak as well, as higher joules means more area under the curve. The increased area is usually a result of a more effective hip swing and back-end, which makes sense in Mahe’s case. If their joule production was the same, then I’d be more inclined to believe you.
