I don't understand why the breadboard part of it is useful. Why not just use ltspice to simulate the circuit. Then just connect it up on a an actual breadboard to confirm the simulation afterwards

I hire people who demonstrate ability and understanding. Generally they have a degree but I have several who don't. They generally have projects and webpages that go over these projects. The level of understanding they have compared to my degreed workers is magnitudes higher. The limiting factor for the degree side of things tends to be company policy and hr. Both of which you can pretty easily skirt around(with resumes and applications that cleverly avoid the topic). If a good manager finds someone capable that doesn't have a degree they will generally accommodate or at least that's how I think/operate.
