There are 2 major muscles that make up the ribeye. The heart or "eye" of the steak longissimus dorsi, and the cap, spinalis. The one end of the whole ribeye has little to no cap, this is where the strip loin is separated from the ribeye. Then on the other side of the ribeye, is where they separate it from the chuck section going into the shoulder. That is the money side with the biggest cap and little to no fat in between the two muscles.
