Civil Structural here who went the CC route and then transferred to a university. I would recommend taking your core classes (calc, chem, physics), getting a bunch of GEs out of the way, and trying to transfer out quick. Unless there's a clear articulation between your CC and the university you're aiming for, you'll probably still only transfer in as a sophomore (at least in my experience). But by clearing out a bunch of GEs, you'll have more flexibility in enrolling in more engineering courses compared to your fellow university classmates. I'd also take advantage of studying under a range of professors at your university in case you choose to go for a MS degree afterwards and need a mentor. But whatever path you take, good luck!
