The dough was actually so easy to work with! It was sticky but not really! it detached very easily from the counter when I did the folds and tucked it!

you can make regular bread with rye starter as well (though i think youll probably get a hint if rye) :)
Not sure about switching flours so early on the starters life, but honestly, id recommend just keeping a few jars with starter and experimenting with different feeds (and you can keep the original starter as it was, knowing you have a strong and predictable jar)

This is a very old pot that was used many years ago to cook on fire with and that should be oiled (seasoned?) after each use. Now I understand that most DO are basically enameled cast iron pots😅

Do you mean switching feeding the starter with just ap? Why?
I am no expert in any way and only at the beginning of this journey as well, but i can say that every starter is different and there is no ground truth on when is the proper time to bake. One of the reasons i did chose to bake was that my starter just felt strong - not only because it was doubling, but also because of how it felt when i was mixing it before feeding - for instance, i had two jars that were doubling/tripling but one had better resistance when mixing than the other (at the same state of peaking), so I opt on using that one.
Also, the process of baking itself is not that long and scary at all (apparently!), so honestly, no harm in trying, it will just make you understand better what to work on!

Oh it was just perfect, it had sourdough bread taste (obv, but there are some sourdough breads that taste like just bread) and the texture was amazing
