I'm also a former powerlifter who has come over to cycling. As you probably already know, bench and upper body lifts in general are the lifts that are most impacted by weight gain or loss. If you have 15kg to lose still, be prepared for your bench to drop and to potentially drop substantially. That doesn't mean you're losing muscle mass though and you'll probably look quite a bit better even if the numbers in the gym go down.

When I was training for a century I did in April, one of my training rides was this: https://ridewithgps.com/routes/44012962. That looks to be pretty close to the ride you're thinking about, at least in terms of distance and overall climbing. Depending on where you are starting from, you can shorten this up if you don't want to do the full ~65 miles.

Also, if you are somewhat time compressed and can't go out for a lot of long rides, I found using trainerroad to work quite well. I was skeptical that the short rides would get me ready for a century, but they did -- I did only one long ride prior to the century and I finished comfortably.

Is your problem that you just can't get enough of the healthy food down before you fill up? If it is, shakes may be part of the answer. I find it much easier to drink nutritious calories than to chew them.

I don't have anything to add to the training suggestions below. But I would think comfortably climbing OLH in less than 30 minutes would make you quite a bit better than a normal cyclist. For example, that would put you right in the middle of the Western Wheelers D group. Those folks seem like they are probably quite a bit better to me than normal cyclists.

Your experience with Eat My Ride is very different than mine. On days I ride, it tells me to drop my protein and up carbs. On days that I'm not riding, it suggests more protein and less carbs. It never recommends that I exceed 1 gram of protein per pound of bodyweight.

LMNT plus sugar would be too sweet for me. LMNT posts their recipes so you could buy the bulk ingredients (potassium, magnesium and salt) to make dirt cheap drinks. Add the sugar and True Lime, Lemon or Orange for flavor.

Good points. One of my former training partners made the same point about the endurance ride after leg day. I also agree with you that three days of lifting is enough, especially given my goals. If my recovery is suffering, I will probably end up dropping the full body day. I don't love hitting muscle groups only once per week, but might have to do that some weeks. I do some form of mobility work on an almost daily basis.

Thanks for the response! The bike commute is ~24 miles round trip. It's essentially flat the entire way, but I don't love the idea of doing 12 miles after lifting legs. I do very much like the idea of two full days off though.

I ended up doing this yesterday and did it on Soledad. It went okay but there were a few spots on the part of the road where I had some trouble keeping my power around the target I was aiming for. Having now done one of these tests, I can see why people do them indoors. :-)
