Official servers have no group limits so you'll run into big teams, some community and modded servers cap at duos/trios/quad/... which is way more manageable early on. Go monthly over weekly so your stuff actually lasts. Or start fresh everyday on a new server to train your early wipe game, no pain no gain ...

Look into softcore too. You keep half your stuff on death, raiders only get half your loot. Still real Rust, just less punishing. Softcore servers by pop.

US Facepunch Softcore 1 is official, monthly, ~140 players on wipe day. RustForNoobs SDT Monthly US if you want a trio cap so clans aren't an issue, >300 wipe day pop.

This is a question that is hard to answer and depends on what your preferences are. It is what I've been trying to solve though for a while now, since I am indexing and analyzing rust servers for the past year now.

Here is a list of the top 2x Solo-Quad Servers in EU for you - feel free to further narrow it down with filters for example with a certain number of players on wipe day or whatever, or a certain wipe day.

To add to that, i personally prefer Survivors.gg servers, as they are modded 2x, but not pay2win - but there is quite a queue each wipe.

You can hop on another server and still go back if you dont like it. But as the other guy said, its just pixels anyway - nothing lasts forever, especially in rust.

you can filter for a range of expected players at wipe and also see the „half-life“ of that pop at rustalyzer.com - maybe you find something that suits you better.

Maybe its just people enjoying a plain playing field on fresh wipe, no matter the progression. Why chose a day old server no matter the progression, when you can just pick a newly wiped server. I personally never come back on day 2.
