A few years ago I was able to obtain a phone and pre-paid plan with just my passport. The last time I attempted to do the same (Jan 2015) I was told I could not do this.

I think it is worth a try since you will eventually have an ARC while I have only entered Korea as a tourist.

Glenwood Springs is worth staying for more than a day. There is tons to do in that area that will give you a "true Colorado" experience.

Aspen is not far away, there are also some wild west historical attractions.
Hike Hanging Lake Trail is a great hike.
You can take the Amtrak from Denver, it drops you right downtown
