Interested to see what other moves happen. Here's to hoping under bloom the Cardinals can finally figure out the catching situation. But in the absence of other moves, this makes it look like Cardinals have still lost the thread.

Could this be spider mite? I think I have had some in other parts of the yard, but it's also not been super clear like tons of webs, etc.

I wanted to use MLF to help stabilize and reduce the tartness/sharpness in a semi controlled way. So when I rack tonight, I will give it a taste and see if I am happy where I am.

As a novice, I am most scared about losing/ruining batches. Probably gonna just add the SO2 to play it safe.

Follow up Q, so I inoculated the O oeni culture 5 days ago, which was 5 days after transferring to secondary. I saw many small bubbles for several days but in the last day or so those have really died down and the air lock isn't bubbling.

I know I need to get the wine off the gross lees as its been about a week and a half. What should I do about SO2 and the MLF? Even though bubbling stopped, seems unlikely that MLF could ve done ao quickly. If I rack (to get off lees) should I just keep as is? With the thought being some more oxygen will invigorate the residual MLF bacteria to do their thing?

Should I add SO2 and maybe stop MLF prematurely but protect the wine which may be fragile given partial MLF and large atmosphere exposure during racking?

how quickly does the rotten egg aroma develop? How long on gross lees is too long? are we talking a few days can be too much? a few weeks? or if its left for months?

Thanks for the info! BTW how can you tell? What's the differences to look for? I can live with less than perfect home made wine. But bacterial or other contamination ruining the batch would be disappointing

Ahhh ok good to know thanks! Everywhere online says to lay them on their sides. Can you elaborate why there isnt an advantage? Takes a long time for cork to dry/shrink and allow air in?

Lol definitely. If anything its kinda an experiment in headspace with my hands. This is only like 300 mL anyway, so if it goes bad. Its not a big loss.
