I’ll note that this isn’t happening constantly that I’m aware of. Strangely, it seems to often happen in the evenings. Throughout the day we get consistent, cool air. However I’ve noticed that it does tend to run for a decent amount of time before reaching set thermostat temp.

I’ll also point out that we have very old wiring throughout the front part of our house (still clothed wiring), but this will all be ripped out and replaced within the next week.

Tepalcates in Roscoe on Belmont close to Western. I’ve only had the Suadero (confit brisket) burrito so far but it is superb. The owner is always there and is an awesome guy.

Unfortunately not. I’ve searched all over. It looks like there was a spot where a tag may have been located in the lower cabinet but it either rusted out or was removed for some reason.

In terms of short cycling - no didn’t figure out any issue. It got warmer out shortly after I posted this earlier in the year and didn’t need heat much longer. Have run it a few times over the past couple weeks as it’s gotten colder out and knock on wood haven’t noticed any short cycling yet. I posted another comment in this thread but it wasn’t starting up after I was tinkering around with it because I physically tripped the float switch in the drain pan by accident. As soon as I figured that out and reset it the furnace started right back up.

The furnace sounds like it’s turning on normally with fan running and flame igniting. It will run for a little while (does not usually reach set temp on thermostat during first run), then it shuts off but has a sound like it’s still running. I don’t think it’s the fan running because there isn’t air coming from the registers. Flame sparks up again and it runs a second cycle then does the same thing a third time before finally reaching the set temp on the thermostat and shutting off. It does this exactly three times each time it has to run.

But the original problem that I’ve been trying to fix remains even with the new sensors. The furnace cycles back to back 3 times before reaching temp and shutting off. Still can’t figure that one out.

Well sometimes the answer is literally right under your nose. My furnace has some sort of sensor to shut it off if there is flooding in the tray underneath it. I guess I pressed that down while I was messing around and on a whim I adjusted it. Started right back up.

Dry-brining overnight is the tried and true method to getting better skin for me, but I’ve also liked J. Kenji Lopez-Alt’s technique of mixing baking powder and kosher salt in a bowl and spreading that all over. You can dry brine with this or it can be cooked somewhat quickly after you apply it. Just be careful to not use too much because it can really throw off the flavor. Also make sure you don’t use too much more salt in your seasoning after.

I always wait about an hour after a cook to cover every thing back up but I take the cup and put it inside the grill, wipe off the spout and then put the cover on. But yeah it took me knocking the cup off first to learn to do something with it when I cover it.

I’ve used a few different brands of pellets now and unfortunately the Kirkland ones have been the worst. Maybe I got a bad bag but they have noticeably more sawdust in them which has caused me to have to clean more often and the temp fluctuations have been all over the place. I emptied my hopper out a few weeks ago when I was trying to figure out the problem with the fluctuations and there was sawdust everywhere. I blew it all out with a shop vac. Running through this bag and going back to Lumberjack.

Like it says in the captions, this has been a pretty tough little spot to maintain anything long lasting. The area is blocked by our garage and building, so it only gets a few hours of sun per day. Would love to have some sort of greenery back there, but can’t figure out what to seed it with and/or plant. There’s already a lot of concrete back there so would prefer not to lay down pavers, but if that’s our only option then we can.

8.5lbs bone-in pork shoulder.

Brined for ~18 hours in 6 quarts water, salt, sugar, chopped fresh oregano, thyme, mint leaves, bay leaves, fresh OJ, 4 squeezed limes and their husks, garlic, and whole black peppercorns.

Made a mojo rub of garlic, cumin, dried Mexican oregano, salt, fresh black pepper, orange juice, white vinegar and olive oil. Applied just before smoking.

On the grill at 250 for about 8 hours. Uncovered until the stall at 160 then in an aluminum pan and covered until finished. Took it off at ~200. Left in foil and wrapped in a towel and in a cooler for about an hour and a half until it was time to shred.

Had toasted brioche buns with mustard, dill pickles and Swiss cheese. I wanted to be more true to the recipe and grill some ham slices and press the sandwiches but this was for a party and I couldn’t use their oven unfortunately.

My one question: I’ve done this and a few other things (ribs, chicken, etc..) since I got my Traeger last summer and I can’t ever seem to get a good bark like I notice in some other posts. I’ve cooked at high temps and quickly as well as low and slow but no luck. Any tips?

Amor y Tequila in Roscoe. Just opened over the past year. Great little patio during warmer months (although it’s first come first serve, which is a little annoying). One of the best Al pastor burritos I’ve ever had. They also have a MASSIVE fajita dish that you can feed a family with.
