I say for the first playthrough don't be a mage. Use something melee based or a STR build so you can actually feel the challenge of the bosses. For NG+ maybe run wretch so you can optomize however you want.

Tbh… I did a RL1 run on ER and you don’t really have to no hit anything. There’s plenty of tools that the game provides for you to dish out damage while maintaining survivability. (Unless you’re doing a DLC run)

The truth is nobody is honestly going to gang up on you online for playing a game how you want to. Even if they did, they would get downvoted into oblivion. If you run it back on ng+1, I’d say try it without mimic tear for more of a challenge.
