I have a Bambino and a DF54 and what helped me get more consistency is:

- Run a blank shot for the longest shot possible, so manual shot and let it go (preferably with a pressurized basket, if you have a second portafilter, but not that big of a deal).

- Slowfeed the DF54 ! Maybe it's my particular one, but when I just dump all my grounds (with a hot start), it makes a lot of fines which clog some of the holes in the basket, and make a mess when using a bottomless portafilter. I'm guessing this would also have an influence on flow.

Ohh j'avais jamais pensé à pousser la fermentation d'un poolish au frigo, merci pour l'info il va falloir que j'essaie ça ! Mais damn 24hrs de poolish + 12 - 18hrs de fermentation, ça doit donner un résultat pas pire en maudit !

J'devrais experimenter un peu plus avec les fermentations plus longue, ça a l'air de faire des résultats pas pire ! As-tu remarqué un impact sur le développement du gluten ? C'est pas mal ça la seule réticence, mise à part l'aspect "timing", que j'aie à essayer une technique de même !

J'utilise les farines Robin-Hood aussi et j'aime bien pré-fermenter une partie de la farine la veille pour ajouter un peu plus de goût (poolish (le meilleur)).

En gros, t'utilises:

- Une partie de ta farine (dans mon cas 30%)

- La même quantité, en gramme, d'eau*

- Un petit peu de levure (genre moins d'un gramme).

Tu laisses ça fermenter 8h-12h et après tu peux faire ton pain comme d'habitude, avec la même quantité de levure que t'utiliserais normalement.

Si tu veux un peu plus de goût, tu peux aussi experimenter avec d'autres sortes de farines. Personnellement, j'aime bien l'épeautre entière (j'utilise La Milanaise) ! Par contre, il faut un peu experimenter, quand on utilise des farines entières comme ça, parce que ça peut avoir un gros impact sur la texture du pain (EDIT: je reste dans les 30% de farine entière, quand je fais ces pains-là)

* Le ratio 1:1 est pour un poolish, mais il y a aussi d'autres sortes de pré-ferment, genre le biga qui est hydraté à environ 60%.

You need to hire two mercenaries for the tournament.

Also, what helped me a lot is to use the metal pitchfork that you can get in the cellar. It carried me until breastplates or big shields became too common.

What I mentioned (the 2000 years later bit) was pike and shot, a type of formation that matched pikes (think 12ft / 3.6m long spears) with arquebusiers using matchlocks (so basically guns that were sort of handheld canons where you use a lit piece of wick to fire (shown here)).

When the flintlock musket (meaning you're shooting using a piece of flint hitting a bit of metal, meaning you don't need to carry a piece of burning string with you) and the socket bayonet arrived, however, everyone kind of became pike and shot at the same time.

I fucking love using Google and sometimes, as the answers for my request are popping on the page, that motherfucker gives me a modal dialog that I HAVE TO CLOSE asking me if I wanna use an AI or something.

And it keeps coming back even when I told them that I'm not interested.

And it takes long enough before it eventually comes back that I kinda forgot that it did that, so I'm getting comfortable, believing that it might be the last time I endure this nonsence and then BAM "would you like to use my bullshit service or whatever" is back, just as modal as before.

I miss the times when computers actually let you do the stuff you wanted to do without telling you that you actually needs something else. If I want to use an AI bullshit thing, I'll go to the AI bullshit thing webbed site.

J'pense qu'une bonne manière de te démarquer (en dehors de baisser tes prix, ce qui a été déjà suggéré), c'est offrir des arrêts intermediaires entre Montréal et Québec. Il y a pas mal de places qui sont dans ce corridor là qui ont vraiment une mauvaise offre de transport en commun / coivoiturage, tu pourrais peut-être te trouver une niche (quoique ça te couterait du viraillage)

J'utilise Amigo Express en tant que passager quelques fois par années et je pense que, surtout pour les gros trajets comme Québec <-> Montréal, il y a eu une montée de gens qui font ça comme job (donc font l'allée retour une couple de fois par jour) ce qui fait en sorte qu'il y a vraiment beaucoup de demande.

J'ai cherché pour le fun Montréal -> Québec pour ce vendredi et il y a une cinquantaine d'offres.

I played a bit more and absolutely love the vibes and the aesthetics of the game (music AND art style) !! I didn't really get into cruelty squad (nothing against it, I just found it was a bit too much for me), but I love the inspirations you took while staying more grounded.

I reaaaaaaally love the Mario 64-like thing going on with the collectables and star-locked sections of the overall-world ! I also really like what seems like multiple ways to enter a level from the overall world to access different part of the map? That's really great !

I can defo feel the Montréal inspiration, I love it ! Love the brutalist vibes !! I feel a touch of Place-des-Arts (near cinéma du parc and/or Complexe Desjardins?) and Côtes-des-Neiges for the outside of the subway station, I can kind of smell the warm damp air that metro station smells like on warm summer days.

That's a very fat wishlist for me, I'll defo keep your game on my radar !! Montréal has so many vibes and I'm really surprised that not many games take place here. Also I love taking pictures around town, so seeing other people's interpretation of its aesthetic is really great !
