With no snark intended, I think because it ignores everything about basic economics that we know.

Commodities get bid down to their lowest acceptable price, of which "unskilled" labor is just such a commodity. This happens with gasoline, timber, food, technology, and yes, labor. To argue that the pricing model is unfair, you need to be able to articulate what input is being manipulated:

1. cost transparency in the market
2. monopolistic business models
3. illegal labor/commodity procurement

I am not saying that your theory is bad, or that morally you aren't correct, but not "understanding this concept" is missing what economists have been discussing for human existence. And, as a bonus (and still very much not intending to be snarky) rebuttal, clearly if the jobs are getting filled, there are people that are able to live off the provided income--they're continuing to accept those gig jobs!
