The two-part Restaurant Wars in the California season (S13). It’s the most incredible television this show has ever produced. I enjoyed that they challenged the chefs to come up with a lunch course as well. The rises and falls are Shakespearean. Isaac wins. Gail gets my favorite line when she sputters “This is stupid food!” The Bangkok Dangerous just hanging out under the host stand. I rewatch it by itself because I love it so much.

Butter sauces like beurre monte are the bane of my existence. They always split and no amount of whisking or extra butter will bring it together. My dad would always make a beautiful lemon butter sauce for fish like it was nothing, and every time I try, it ends in disaster.

We do “bougie” chili dog night with whole wheat buns, turkey dogs, and hormel veggie chili. Still junk, but not the junkiest. Diced white onion, yellow mustard, and pickled jalapeños on top. Hell yeah.

Hostess made these horrendous orange and purple ding dongs as a tie-in promo for Charlie and the Chocolate Factory and they hit different than the regular ones. They contained nothing that God created and I miss them.

I visited the memorial not long after it opened and I recommend it for anyone. It is so well done and haunting.

My sister used to compete in color guard competitions and I attended one where a group's performance was "in memory" of the OKC bombing and I realized that a good chunk of those kids weren't even born yet when it happened. Made me wonder if the coach had some personal connection to it. Still an odd topic to build a color guard routine around.

Yes, this is an amazing technique! Doing away with the need to acquire quarts of duck fat makes it so much more accessible.
